California Veggie Wraps

Serves: 4


  • ½ cup plain Greek yogurt
  • 1 avocado, mashed
  • 1 clove garlic, minced
  • 4 whole-wheat tortillas
  • 1 cup broccoli flowerets
  • ½ cup thinly sliced red onion
  • 1 cup thinly sliced red peppers
  • 2 cups torn pieces of spinach
  • ½ cup shredded 2% Colby jack cheese


  • In a small bowl mix the yogurt, mashed avocado and garlic together
  • Spread a generous layer of avocado mixture on the tortillas, leaving a 1-inch border
  • In the center evenly distribute the veggies among the four tortillas
  • Top with cheese
  • Roll up burrito style and eat immediately or tightly seal and serve within 1-2 days
