HyVee dietitian Alyssa Field is back with more Healthy Cooking Class ideas for the month of February. Saint Lukes and HyVee are putting on these classes all month long. Alyssa demonstrates easy heart smart pancakes. Classes are only $10 and you just need to call the HyVee store you wish to attend and register. There is one class tonight, and a few next week.

Heart Smart Pancakes Recipe
Makes 10 small pancakes

Ingredients:

1 cup quick-cooking oats
½ cup whole wheat flour
1 tbsp baking powder
¼ cup milled flax seed
1 cup fat-free milk
2 tbsp unsweetened applesauce
4 egg whites

Preparation:
In a bowl, combine the oats, flour, baking powder and milled flax seed.

In another bowl, combine milk, applesauce and egg whites; add to dry ingredients and mix well.

Pour batter by ¼ cup onto a heated griddle coated with cooking spray.

Cook until bubbles appear on the top; turn and cook until lightly brown.

Serve with warm unsweetened applesauce, strawberry slices and cinnamon.  Enjoy!
