Sweet Potato-Apple Fritters from Meals by the Week

Ingredients:

1 cup cooked, mashed sweet potato
1 medium apple, peeled, cored, and finely diced
1/3 cup plain yogurt
1/2 cup unbleached flour
1/4 cup sugar
1 egg
1 tsp cinnamon
1 tsp baking powder
sea salt to taste
butter

Directions:

Preheat skillet over medium-high heat. Combine sweet potato, apple, yogurt, flour or almond meal, sugar, egg and spices in a large bowl. Grease skillet with about 1 tablespoon of butter per batch. Drop by rounded tablespoonfuls into the skillet, then flatten each fritter until it is about 1/2 inch thick. Cook for 3-5 minutes per side; cool slightly on a paper towel lined plate before serving. If desired drizzled with maple syrup or powdered sugar to serve. Makes about 16 fritters.
